Beet Growing Tips
There are a number of different varieties of beets including red, Chioggia – which have rings of red and white flesh, and gold. The entire beet plant, including the greens, is edible. Greens are wonderful both sautéed or added raw to salads. Beets are a cool season vegetable and can tolerate light frosts, making them useful for both spring and fall plantings.
Planting
- Prior to planting, prepare the soil by incorporating a good quality compost and a balanced fertilizer.
- Beets should be planted about 3” apart.
Watering
Beets grow best with uniform and consistent moisture. Make sure to provide irrigation especially during dry periods. Drip irrigation is an effective and efficient way to irrigate vegetable crops because the water is delivered directly to the soil where it will be taken up by the roots. Drip irrigation also keeps water off of the foliage which will reduce the risk of disease development.
Maintenance
Weed regularly to prevent weeds from becoming established and competing with the beets for water and nutrients.
Harvesting
Beets are best when harvested between 1 and 3 inches in diameter. Beets may be stored short term, unwashed, in the refrigerator. Wash beets carefully when ready to use – no need to peel. Beets may be processed and frozen or canned for longer term storage.
