In about 75 days, this miniature form of young corn is harvested before it reaches full maturity, giving it a tender and crunchy texture. It's often recognized for its delicate appearance and mild flavor and is a popular vegetable in various cuisines worldwide. While commonly associated with Asian cuisine, where it adds a unique texture and visual appeal to dishes, baby corn is also utilized in Mediterranean and Latin American cooking. Harvest soon after silks emerge (within 5 days) to stimulate more ears forming. Plants will grow about 4 to 5 feet tall and produce 3 to 4 stalks per plant. Each plant will produce about 40 ears!
Corn Growing Tips
Corn is a sweet and delicious summer treat that can be a lot of fun to grow in the home garden.
Planting
- Corn grows best in a well drained soil with a pH between 5.8 and 7.0. Prior to planting, prepare the soil by incorporating a good quality compost and a balanced fertilizer.
- Wait to plant corn transplants until the soil has reached 60 degrees. Pick a location with full sun (6+ hours).
- Corn relies on wind for pollination. Plant individual plants in blocks instead of a single row to ensure good pollen movement between plants. If corn isn’t adequately pollinated, the ears will have blank spots where kernels have not formed.
- For baby corn, space plants about 8” apart.
Watering
Make sure to provide regular irrigation, especially during dry periods. Corn requires about 1 inch of water per week. Drip irrigation is an effective and efficient way to irrigate vegetable crops because the water is delivered directly to the soil where it will be taken up by the roots.
Maintenance
- Weed regularly to prevent weeds from becoming established and competing for water and nutrients.
- A side-dress of fertilizer may be added part way through the season.
Harvesting
- For baby corn, harvest about 5 days after the silks appear.
- Baby corn can be eaten raw, steamed or in stir fries and soups. The ears can also be dried for popcorn.
